About Dreaming of Noodles
I've always had a love affair with ramen as well as the art of cooking and the science of experimenting with food. Over the years I have started learning the different components that make a good ramen, from the humble soft-boiled egg whose silky golden yolk is a sight to behold, to the patient boiling of the broth, which adds more umami with every passing hour, and I have come to understand the level of commitment true ramen chefs put into developing exceptional flavour for every slurp.
This has led me to make this website, which was born from the idea that the best ramen in the world must come from its birthplace of Japan, where it is the national dish, and that there will be regional variations of the dish that I have yet to taste.
So, this blog is a virtual tour of Japan's 47 prefectures, where I will explore their regional dishes and try to recreate them at home.
